Lipid droplets in the liver of nonalcoholic fatty liver disease (NAFLD) exhibit lipid molecular order. The phase state of this lipid molecular order seems to be closely related to NAFLD progression. In this study, we investigated the relationship between the phase state of lipid droplets accumulated in the liver of NAFLD model mice and various spectroscopic properties (polarization, Raman spectroscopy, and second harmonic generation).
