The spices that was harvested is contaminated with many bacteria.Therefore, it is necessary to sterilize the number of bacteria according to the Food Sanitation Law.Currently in Japan, sterilization treatment using superheated steam is adopted.However, degradation of spices is considered a problem because of high temperature treatment.Therefore, attention is paid to low temperature sterilization method using atmospheric pressure plasma.This paper examines bactericidal effect and quality evaluation of spices by plasma.
