[14a-PB2-1] Raman Analysis of Cooked Rice Grains

The purpose of this research is to extract two-types of Raman spectra of starch for a cooked rice grain in order to explain hardness or softness of cooked rice, differentiated in terms of degree of hydrogen bonding.
