We absorb various essential substances from nutrients contained in food and maintain or metabolize them to control enzyme activities and cell functions to maintain life. In particular, inadequate intake of nutrients such as essential fatty acids, vitamins and minerals is known to cause various diseases, but besides inadequate intake, it has become clear that metabolic changes of nutrients by abnormalities in enzymes and transporters involved in nutrient metabolism and absorption, or intestinal bacterial flora and disturbance due to ingestion of harmful substances cause the onset and suppression of various diseases, and new functions of nutrients have also been clarified. We consider the metabolic changes of nutrient caused by food-nutrients and harmful substances as food-nutrient stress. In this symposium, we will discuss about the relationship between the novel functions of MK-4 and the disease found from the analysis of new vitamin K-converting enzyme-deficient mice, the mechanism of disease onset by trans fatty acids, Disease control by intestinal microbiota metabolizing n-3 fatty acids , regulation of absorption of food-derived essential trace element selenium-containing compounds by intestinal bacteria and control by enterohepatic circulation by new in vivo selenium metabolites, the importance of trace element manganese and its relation to diseases identified by analysis of Zn-Cd transporter.
