[S38] Approach from the pharmaceutical field to carotenoid research

Carotenoids are natural pigments such as red, orange-red, and yellow that are found in plants, animals, microorganisms, fungi, and algae, and more than 700 carotenoids have been characterized to date. Carotenoids are roughly divided into carotenes composed only of carbon and hydrogen and xanthophylls having hydroxyl groups in the carotene skeleton, and both have the property of being difficult to dissolve in water and soluble in fats and oils. Carotenoids have been used mainly as food color additives in the industry. However, since they have antioxidant activity and a role as a precursor of vitamin A, development research has been carried out in various fields such as health foods, supplements, and cosmetic additives. As a result, it has become clear that they have many new physiological effects that are beneficial to human health. Specifically, carotenoids have a preventive effect on cancer and locomotor disorders, and carotenoid metabolites have an improving effect on metabolic diseases and atopic dermatitis. Therefore, they are attracting attention from various fields as old and new functional materials. At this symposium, we will give a lecture on topics related to new uses of carotenoids, such as novel physiological actions of these carotenoids and formulation technology that improves gastrointestinal absorption in order to fully exert the physiological actions. Then, we will discuss the role of the pharmaceutical field in future carotenoid research.
