[S41] Food and environmental hygiene management by microbial examinations

Microbial examinations according to the hygiene test method are performed on food and environmental samples, and the microorganisms to be tested include bacteria, fungi, viruses, protozoa and worms.
1. Hygiene management based on HACCP is required for food samples. Safety is ensured by performing microbiological tests on each of the processes and on final products.
2. Live vaccines have problems of spreading into the environment through feces. Therefore, environmental water surveillances of poliovirus (PV) are important.
3. In Japan, we are often at risks of natural disasters such as earthquakes and typhoons. Fungi can overgrow in flooded homes and can pose health risks.
4. Microbial examinations on food and environmental samples have targeted specific microorganisms, however, currently it is also possible to analyze the presence of microorganisms in the samples as a community structure.
At this symposium, four researchers will provide the latest information on microbiological examinations.
