Cellulose nanofiber (CNF) is one of the cutting-edge materials being researched and improved around the world. CNF is widely applied in industrial and cosmetic uses, but also in the food industrial use. Though in the present, the most major source of CNF for industrial use is the plants, and normally, they are chemically and mechanically processed. But when the application in food industry is considered, this is not the best process to be utilized.

Therefore, in this research, the potential of Acetobacteraceae, the common CNF producing bacteria, as a CNF producer was investigated, in order to see the possibility of bacterial produced CNF for food industrial use.

To assess the potential of Acetobacteraceae as a CNF producer, the production ability of different Acetobacteraceae species were compared qualitatively and quantitatively. Qualitatively, the production ability was assessed by comparing the absorbance of main culture medium before and after the 1 day culture. Qualitatively, drops of samples were extracted from the medium, 12, 18, and 24 hours after the culture, and observed under a microscope.
