負の圧力には殺菌作用があると予想されている.その根拠は，温度と圧力と菌の生存領域の関係を示すグラフを描くことによって示される．グラフは現在正圧のみで得られており，半楕円型になる．半楕円内部が菌の生存域，外部が菌の死滅域となる．この半楕円がきれいな楕円を描くと考えると，低圧低温で殺菌するほうが高圧高温で殺菌するよりも効率的に殺菌できるのではないかと考えられる．それを本研究によって明らかにする．
