Sugar concentrations (Brix %) of orange juice, tomato juice and tomato were evaluated using optical scattering spectrum and angular distribution of scattering intensities. In the orange juice, tomato juice and tomato, scattering intensities and their angular distribution of tomato juice are found to depend on the sugar concentrations. The sugar concentrations can be evaluated based on the optical scattering intensities using various light sources.
