The stage in agriculture from harvest to delivery of the products to the consumer is called as post-harvest process. The post-harvest process consists of preservation of the agricultural product, the transportation and the food processing. As the high-voltage and plasma applications in the post-harvest process, the airborne bacteria are collected and inactivated for keeping freshness. The phytohormones, which accelerates the ripening of agricultural products, are decomposed via oxidization process. The pulsed power is a technology which can temporally and spacially control the electric field distribution and plasma with high-accuracy. The pulsed power technology can be used to increase the selectivity of the reaction. Here, the pulsed power controlled plasma and electric fields applications in post-harvest process are described focusing on its mechanism.
