Dietary intake provides us various nutrients. However, daily diet may also contain substances which affect activity of body functions. Therefore, we need to pay attention to what is contained in diet not only nutrients.
Trans-fatty acids produced through industrial processes (industrially produced TFAs) is contained in many daily foods and intake of industrially produced TFAs is involved in the development of cardiovascular diseases. Therefore, several countries mandatory limit a use of industrially produced TFAs or decides labeling obligation. On the other hand, in Japan, Consumer Affairs Agency of Japan requests disclosure of information about TFAs but there are no mandatory restrictions.
In this symposium, we would like to consider mandatory limitation and labeling obligation of industrially produced TFAs based on information from the government and the latest findings from epidemiological and basic research in University. Moreover, we hope that this symposium contributes participants to consider and disseminate information of what is contained in diet.
