[S47] Development of food with health claims from pharmaceutical approaches by young researchers

In order to extend the "healthy life expectancy" which is the average life in good health, food with health claims that can be eaten on a daily basis, are attracting attention. In this background, the market of the functional food with health claims has expanded year by year. However, the development of the foods with low quality can cause health problems, so that food sanitation act was amended. Therefore, the development of the functional foods with high quality is urgently needed in Japan.
To this end, it is important not only to analyze the functions by administrating bioactive substances with the experience in eating/drinking to animals, but also to guarantee their quality by improving their function through formulation processing, understanding their physicochemical properties, analyzing kinetics and safety after the administration, and elucidating the mechanism of functional expression.
In this symposium, young researchers who try to develop the functional foods with high quality, will give lectures. And then we would like to discuss the future development of food with health claims.
