Quinoa is a major crop in the Andean highlands of Bolivia, and the use of the stalk for feeding has been limited because of the high lignin (ADL) content and hardness. We have already demonstrated the reduction of ADL content and hardness by incubating with white rot fungi (WRF) under warm and wet condition. In this study, we investigated whether the effect of reducing ADL and hardness by WRF can be obtained even under the low temperature and dry conditions of the Andean highlands.Quinoa stalk harvested at Viacha was crushed and moisture conditioned. The stalk was sterilized by sunlight treatment or autoclave treatment before inoculation with Pleurotus ostreatus (PO) or Pleurotus eryngii (PE). The stalk was incubated for 30 days, and chemical composition and hardness of the stalk was compared before and after incubation. The average temperature and humidity during the incubation was 15.8 ℃ and 61.4 %, respectively. ADL content of the stalk before incubation was 9.9 % DM and neither PO nor PE treatment reduced the ADL content. However, hardness of the stalk before incubation was 8.2 kgf/cm2 and was decreased by treatment with PO and PE to 3.5 and 4.8 kgf/cm2, respectively.
